Maçãs

para o pequeno-almoço.
Apples for breakfast.

Chausson de maçã / Chausson aux pommes
(para 8 unidades)

massa / pastry:
250gr de farinha / 250gr flour
200gr + 35gr de manteiga / 200gr + 35gr butter
12,5cl de água / 12,5 cl water
5gr de flor de sal / 5gr fleur de sel

compota de maçã / apple confiture:
600gr + 1 maçãs golden / 600gr + 1 golden apples
70gr de açúcar / 70gr sugar
4 cl água / 4 cl water
70gr de manteiga / 70gr butter
1 vagem de baunilha / 1 vanilla pod

1 ovo batido / 1 egg beaten

Para a massa, amassar a farinha com a água, flor de sal e 35gr de manteiga, com a ponta dos dedos. Envolver em película aderente e refrigerar durante uma hora. Estender a massa num quadrado de 10cm de lado. Moldar a manteiga num quadrado de 5cm de lado e colocar a meio da massa, na diagonal. Dobrar as pontas da massa sobre a manteiga. Estender a massa até ficar com 40 cm de comprimento e dobrar em três.  Virar a massa a 90º e repetir esta operação. Refrigerar durante duas horas e repetir o processo anterior. Refrigerar durante duas horas e repetir pela ultima vez o processo. Reservar no frigorifico.
Para a compota, levar a manteiga ao lume até derreter. Juntar as maçãs descascadas, descaroçadas e cortada em fatias muito finas. Juntar o açúcar  água e o interior da vagem de baunilha. Retirar do lume quando a maçã estiver cozida. Juntar uma maçã descascada e cortada grosseiramente.
Estender a massa com cerca de 2mm de espessura. Cortar círculos de massa, colocar a compota de maçã e dobrar, pressionando as bordas. Pincelar com o ovo batido. Refrigerar durante uma hora. Levar ao forno pré-aquecido a 180º durante cerca de 40 minutos.


For the pastry, mix the flour with water, sea salt and 35gr of butter with your fingertips. Wrap in plastic wrap, and refrigerate for one hour. Roll out the pastry into a square of 10cm. Shap the butter in a square of 5cm  and place over the pastry, diagonally. Fold the edges of the pastry over the butter. Roll out the pastry until it is 40 inches long and fold into three. Turn the pastry 90 degrees and repeat this operation. Refrigerate for two hours and repeat the above process. Refrigerate for two hours and repeat the process for the last time. Reserve in the refrigerator.
For the compote, bring the butter to medium heat until melt. Add the apples peeled, cored and cut into very thin slices. Add sugar, water  and the vanilla seeds. Remove from heat when the apple is cooked. Add an apple peeled and coarsely chopped.
Roll out the pastry to about 2mm thick. Cut circles, place the applesauce and fold, press the edges. Brush with beaten egg. Refrigerate for one hour. Bake in  preheated oven to 180 for about 40 minutes.
