pastéis de nata | portuguese custard tarts

40 anos de liberdade celebrados com o bolo português mais internacional.
Se há um bolo perfeito tem de ser o pastel de nata. É por isso que todos os dias, misteriosamente, salta-me uma miniatura  para a boca.

If there is a perfect cake it has to be the custard tart. That's why every day, mysteriously, a miniature jumps into my mouth.




PASTÉIS DE NATA
CUSTARD TARTS

250gr de massa folhada / 250gr flaky pastry
500ml de leite / 500 ml milk
250gr de açúcar / 250gr sugar
50gr de farinha / 50gr flour
casca de limão / lemon peel
1 pau de canela / 1 cinnamon stick
1 ovo / 1 egg
5 gemas / 5 egg yolks

Estender a massa o mais finamente possível e enrolar. Cortar fatias com cerca de 3cm e colocar em formas de queques. Humedecer os polegares e forrar as formas com a massa. Repousar no frio por 30 minutos.
Para o creme, ferver o leite com a casca de limão e canela. Verter sobre a farinha misturada com o açúcar. Depois de o leite estar arrefecido, juntar os ovos. Encher as formas com o recheio. Levar os pastéis a forno pré-aquecido a 250º durante cerca de 15 minutos.

Roll out the dough as thinly as possible and curl. Cut slices of about 3cm thick and put in cupcakes tins. Moisten thumbs with water and line the tins with the dough. Refrigerate for 30 minutes. 
For the cream, boil the milk with the lemon peel and cinnamon. Pour over the sugar mixed with the flour. After the milk is cooled, add the eggs. Fill the tins. Bring to preheated oven at 250 º for about 15 minutes.
