PROFITEROLES DE FRAMBOESA / RASPBERRY PROFITEROLES

Creme de framboesa / Raspberry cream
500gr de polpa de framboesa / 500gr raspberry pulp
1 folha de gelatina / 1 gelatin sheet
3 gemas / egg yolks
1 ovo / egg
120gr açúcar / 120gr sugar
50gr amido de milho / 50gr cornstarch
50gr de manteiga / 50gr butter
100gr de natas batidas / 100gr whipped cream

Massa choux / Choux pastry:
8cl de água / 8cl water
10cl de leite / 10cl milk
4gr de sal fino / 4gr sal
4 gr de açúcar / 4gr sugar
75gr de manteiga / 75gr butter
100gr de farinha / 100gr flour
3 ovos / 3 eggs

Caramelo / caramel:
40gr de polpa de framboesa / 40gr raspberry pulp
75gr de glucose / 75gr glucose
250gr de açúcar em pó / 250gr powder sugar

framboesas frescas / fresh raspberries
pétalas de rosa cristalizadas / candied rose petals (*)

Para o creme, ferver a polpa de framboesa. Misturar os ovos, açúcar e amido de milho. Verter um pouco da polpa fervida. Misturar bem e juntar à restante polpa. Levar ao lume, mexendo sempre até engrossar. Retirar do lume, adicionar a gelatina hidratada e envolver a manteiga. Refrigerar coberto com película rente à superfície. Depois de completamente arrefecido, envolver as natas batidas.
Para os profiteroles, levar o leite, água, sal, açúcar e manteiga ao lume até ferver. Retirar do lume e adicionar a farinha. Mexer bem. Levar de novo ao lume por cerca de 2 minutos até a massa formar uma bola que se despega do tacho.
Colocar a massa na batedeira e adicionar os ovos um a um.
Colocar a massa num saco de pasteleiro e, num tabuleiro forrado a papel vegetal, formar os profiteroles. Levar a forno pré-aquecido a 180º durante cerca de 25 minutos. 
Depois de completamente arrefecidos, rechear com o creme de framboesa, com a ajuda de um saco de pasteleiro.
Para o caramelo, levar todos os ingredientes ao lume até atingir os 165º. Mergulhar o topo dos profiteroles no caramelo com cuidado. 
Montá-los num prato e decorar com framboesas frescas e pétalas de rosa cristalizadas.

For the cream, boil the raspberry pulp. Mix the eggs, sugar and corn starch. Pour a little of the boiled pulp. Mix well and add the remaining pulp. Bring to medium heat, stirring constantly until thickened. Remove from heat, add the hydrated gelatin and involve butter. Refrigerate covered with cling film to the surface. After completely cooled, wrap the whipped cream.
For the profiteroles, bring the milk, water, salt, sugar and butter to boil. Remove from heat and add the flour. Stir well. Bring back to heat for about 2 minutes until the dough forms a ball that detaches from the pan.
Place the dough in the mixer and add the eggs one by one.
Place the dough in a pastry bag and in a tray lined with parchment paper, form the profiteroles. Take to preheated oven at 180º for about 25 minutes.
Once completely cooled, fill with the cream with the help of a pastry bag. 
For the caramel, bring all ingredients to boil until it reaches 165 º. Dip the tops of profiteroles in caramel carefully. 

Assembly them on a plate and decorate with fresh raspberries and candied rose petals.

(*) Para cristalizar as pétalas, pincelar com clara de ovo e passar por açucar. Deixar secar a 35º durante algumas horas. 
To crystallize the petals, brush them with egg white and  pass through sugar. Allow to dry at 35 ° for several hours.
