para o pequeno-almoço

DINAMARQUESES DE MIRTILOS / BLUEBERRY DANISH

250gr de mirtílos / 250gr blueberry
150gr de geleia de alperce para o brilho / 150gr apricot jam  to glaze

Massa / dough:
500gr de farinha / 500gr flour
10gr de sal / 10gr salt
80gr de açúcar / 80gr sugar
10gr de fermento seco / 10gr instant yeast
2 ovos / 2 eggs
9cl de água / 9cl water
12,5cl leite / 12,5cl milk
250gr manteiga / 250gr butter
Coloque a farinha na batedeira com um gancho de amassar . Adicionar o sal e o açúcar para um dos lados da tigela e a levedura para o outro. Adicione os ovos, água e leite e misture em velocidade lenta por 2 minutos , em seguida, em velocidade média por 6 minutos.
Deite a massa sobre superfície enfarinhada e forme uma bola. Polvilhe com farinha , coloque  num saco plástico limpo e  levar ao frigorífico por uma hora.
Em superfície enfarinhada , estenda a massa gelada formando um retângulo, de cerca de 50 x 20 centímetros e cerca de 1cm de espessura. Molde a manteiga  num retângulo, cerca de 33 x 19 centímetros . Coloque a manteiga na massa de modo a que cubra  dois terços. Dobrar o terço da massa sobre a manteiga. Dobrar o outro terço da massa.
 Terá agora uma sanduíche de duas camadas de manteiga e três de massa. Comprima as bordas levemente para selar a manteiga. Coloque a massa de volta no saco plástico e leve ao frigorífico por uma hora para endurecer a manteiga.

Retire a massa do saco e coloque-a sobre uma superfície enfarinhada com a extremidade curta para si. Estender num retângulo , cerca de 50 x 20cm , como antes. Dobrar a massa em três partes. Coloque a massa de volta no saco de  plástico e leve ao frigorífico por uma hora. Repita este processo mais duas vezes, colocando a massa de volta no frigorífico entre as voltas. A massa agora precisa refrigerar por 8 horas.
Put the flour into the bowl of a mixer fitted with a dough hook. Add the salt and sugar to one side of the bowl and the yeast to the other. Add the eggs, water and milk and mix on a slow speed for 2 minutes, then on a medium speed for 6 minutes.
Tip the dough out onto a floured surface and shape it into a ball. Dust with flour, put into a clean plastic bag and chill in the fridge for an hour.
On a floured surface, roll out your chilled dough to a rectangle, about 50 x 20cm and about 1cm thick. Flatten the butter to a rectangle, about 33 x 19cm. Lay the butter on the dough so that it covers the bottom two-thirds of it.
Fold the exposed dough at the top down over one-third of the butter. Now gently cut off the exposed bit of butter, without going through the dough, and put it on top of the dough you have just folded down. Fold the bottom half of the dough up. You will now have a sandwich of two layers of butter and three of dough. Pinch the edges lightly to seal in the butter. Put the dough back in the plastic bag and chill for an hour to harden the butter.
Take the dough out of the bag and put it on a floured surface with the short end towards you. Now roll it out to a rectangle, about 50 x 20cm as before. This time fold up one third of the dough and then fold the top third down on top. Put the dough back in the palstic bag and chill for another hour. Repeat these stage twice more, putting the dough back in the fridge between turns. The dough now needs to be in the fridge for 8 hours.

Creme pasteleiro / pastry cream:
100gr de açúcar / 100gr sugar
4 gemas de ovo / 4 egg yolks
40gr de amido de milho / 40gr cornstarch
50cl leite / 50cl milk
2 vagens de baunilha / 2 vanilla pods
20gr de manteiga / 20gr butter
Levar o leite a ferver com a baunilha.
Bater as gemas com o açucar e amido de milho. Adicionar o leite fervido. Levar novamente ao lume, mexendo sempre até engrossar. Retirar do lume, adicionar a manteiga e refrigerar.
Bring the milk to a boil with the vanilla.
Whisk the egg yolks with the sugar and cornstarch. Add the boiled milk. Bring back to the boil, stirring constantly until thickened. Remove from heat, add butter and refrigerate.

Glace de limão / lemon icing:
200gr açúcar em pó / 200gr powder sugar
2 cs de água / 2 tbsp water
raspa de 1 limão / zest of 1 lemon
Bater todos os ingredientes até obter uma mistura cremosa.
Stir the ingredients together until smooth.

Montagem:
Estender a massa com cerca de 5mm de espessura. Cortar quadrados de 7cm lado. Em cada quadrado, fazer cortes de 2,5cm, do vértice para o centro. Dobrar 4 dos vértices para o centro de forma a obter uma estrela. Colocar as estrelas em tabuleiros forrados a papel vegetal. Cobrir e deixar levedar por 2 horas.
Colocar uma colher de creme de pasteleiro no centro da estrela. Colocar 4 mirtilos. Pincelar com ovo batido e levar a forno pré-aquecido a 200º durante 15/20 minutos.
Aquecer a geleia de alperce e pincelar os dinamarqueses. Depois de arrefecidas pincelar as pontas das estrelas com a glace de limão.
Roll out the pastry to about 5mm thick. Cut squares of 7cm side. In each square, cut a diagonal with 2.5 cm from the vertex to the center. Fold the four corners to the center in order to obtain a star. Place the stars on  trays lined with parchment paper. Cover and let rise for 2 hours.
Place a tablespoon of pastry cream in the center of the star. Place 4 blueberries. Brush with beaten egg and bring to a preheated oven at 200 º for 15/20 minutes.
Heat the apricot jam and brush the Danish. After cooled brush the tips of the stars with lemon icing.
