Bolo de chocolate com recheio de mascarpone e morangos balsâmicos
Chocolate cake with mascarpone and balsamic strawberries

Bolo de chocolate / Chocolate cake
25cl de leite / 25cl milk
300gr farinha / 300gr flour
300gr açúcar / 300gr sugar
200gr manteiga / 200gr butter
50gr cacau / 50gr cocoa powder
2 colheres de chá de fermento em pó / 2 teaspoons baking powder
2 colheres de chá de bicarbonato de soda  / 2 teaspoons baking soda
2 ovos / 2 eggs

Morangos Balsâmicos com manjericão / Balsamic strawberries with basil
400gr de morangos / 400gr strawberries
2 colheres de vinagre balsâmico / 2 tablespoons balsamic vinegar 
1 colher de açúcar / 1 tablespoon sugar
1 ramo de folhas de manjericão lavadas e picadas / a bunch of basil leaves washed and chopped

200gr de mascarpone / 200gr mascarpone
100gr de natas / 100gr cream

Açúcar em pó / Powder sugar

Bater as gemas com o açúcar e a manteiga. Juntar a farinha peneirada com o cacau, fermento e bicarbonato de soda. Envolver as claras em castelo. Dividir a massa de modo uniforme por quatro formas. Levar a forno pré-aquecido a 180º durante cerca de 20 minutos.
Levar os morangos, vinagre balsâmico e açúcar ao lume até ferver. Juntar o manjericão e deixar ferver por 6 minutos. Retirar do lume, coar a fruta e reservar. Levar o xarope novamente ao lume até reduzir para metade. Juntar o xarope aos morangos.
Bater o mascarpone  e envolver as natas batidas.
Montagem: espalhar uma camada de mascarpone sobre um dos bolos, colocar a fruta e cobrir com outro bolo. Repetir o processo mais duas vezes. Polvilhar com açúcar em pó.

Beat the egg yolk with sugar and butter. Add the flour sifted with the cocoa powder, baking soda and baking powder. Fold the egg whites whipped. Divide the mixture for four pans and bake the cakes for 20 minutes in preheated oven at 180º. 
Bring the strawberries, sugar and balsamic vinegar to boil. Add the basil and let it boil for about 6 minutes. Remove from heat. Strain the fruit in a boil. Bring the syrup to heat again and let it reduce to half. Pour over the strawberries.
Beat the mascarpone and fold the cream stiff.
Spread a layer of mascarpone over one cake, top with the strawberries. Repeat the process twice. Sprinkle with powder sugar.
